Once the kitchen is set up in Eugene, Thanksgiving test recipe season will start in earnest.

Step one - Build a list of cool sounding dishes that I have no idea how to cook.

- Riesling infused figs with jalapeno simple syrup.
- Smokey green chili and pulled pork carbonara with fresh pasta.
- Marinated steak salad with orange vinaigrette.
- Salmon and grilled asparagus caesar sandos.
- Salt & pepper crispy tofu with seaweed salad.
- Wild hazelnut praline glazed pork belly.
- White wine poached trout with chive cream and zucchini croquettes.
- Sweet chili beef lettuce wraps.
- Chicken parm sliders with fondue dip sauce.
- Ginger cheesecake with lime curd and candied passion fruit.
- Green mango and mint salad with sweet pea falafel.
- Crispy olives with chili sauce.
- Jambalaya stuffed peppers with creole crema.
- Bacon wrapped watermelon rind pickles.
- S'mores flaming baked alaska.
- Stuffing flavor buttermilk biscuits with turkey gravy.
- Curried beet salad with lavender goat cheese dressing.
- Some ludicrous tamale preparation. African fusion?
- Blue cheese garlic bread with caramelized onion gravy.
- Thanksgiving flavors benedict with champagne syrup.
- Coq au riesling baked chicken wings with mushroom dip sauce.
- Pastrami and mushroom grilled cheese with tomato bisque.
- Pork verde nachos with black bean chips.
- Korean fried wings with bing cherry chili sauce.
- Carnitas, fried potato and manchego stuffed jalapenos.
- Flambeed English plum pudding with hazelnut hard sauce.
- Sausage meatballs with chimichurri.
- Onion stuffed mushrooms with Gruyere.
- German potato croquettes with dipping sauces.
- Charred cauliflower and romesco tacos.
- Crispy shrimp wontons with ginger scallion cream.
- Blackened corn puree with aged gouda and pickled turmeric onions.
- Sweet potato grits with cocoa-apricot glazed baked fish.
- Shrimp scampi toast.

Step 2 - Realize the list is insane and can never be done and sounds disjointed and weird, what moron would even consider it, and then ignore that and begin making test recipes for everything.

Step 3 - Remember other people might be cooking and see if they have dishes?
